Another dim sum staple - ha gaw 蝦餃 - shrimp dumplings. Succulent pieces of shrimp in a soft but slightly chewy rice wrapper. So good!

Dim sums are typical Cantonese dishes in southern China. The literal translation of dim sum means "point to your heart's desire" because they are like little tapa dishes, and you can pick whatever you want. 

The actual meal, called "yum cha," means "drinking tea." Tea is relegated to the supporting cast in modern times, and the main characters are the little dishes of dim sum.

Care recommendation (guidance only)

  • Use and store ideally at a relative humidity of 35 to 65% and a temperature of 10 to 30° C (50° – 86°F.) 
  • Store papers in archive-quality envelopes, folders, and boxes. ́ Use only archive-grade tapes and glues for mounting & framing.
